Most of us have experienced that moment: you’re cleaning out the pantry and find a dusty can of beans or soup shoved behind everything else — and the date on top expired months ago. Your first reaction is usually to toss it in the trash. But here’s the surprising truth: those dates don’t mean what most people think they do.
Labels like “Best By,” “Best Before,” or “Use By” are about quality, not safety. They’re the manufacturer’s estimate of when the food will taste its absolute best. The day after that printed date doesn’t magically make the food dangerous or spoiled — especially when it comes to canned goods.
In fact, properly stored canned foods often last much longer than the date suggests. If they’ve been kept in a cool, dry place away from humidity and heat, many cans remain perfectly good far beyond the printed date.
Here’s a simple breakdown:
High-Acid Foods (tomatoes, fruits, juices)
These tend to keep their best flavor for about a year after purchase, but they’re often still safe well past that if the can is intact.
Low-Acid Foods (beans, corn, soups, vegetables, canned meats)
These are even more stable and can remain safe for several years past the listed date.
The real safety check isn’t the number on the can — it’s the can itself. Before deciding to throw it away, look for warning signs:
• Bulging or swollen can
• Rust (especially deep rust)
• Leaking
• Severe dents, especially near the seams
• A bad smell or unusual color when opened
• Liquid spurting out when you open it
If any of these signs appear, throw it out immediately — no exceptions.
But if the can looks normal, opens normally, and the contents smell and look like they should, the food is generally considered safe to enjoy.
Understanding the difference between quality dates and safety guidelines can save you money, reduce waste, and help you keep a smarter, more efficient pantry. So before tossing that older can, take a moment to inspect it — you might be surprised by how much good food is still perfectly usable.
